My husband calls these Gourmet Meatballs..I laugh because they are super easy! I love to serve these with Rice to for a dinner. These are enough for both me and my husband and then him to have some for lunch the next day.
1 lb. ground beef
1/4 cup chopped fresh cilantro
1 jalapeƱo pepper, minced (I use 1 small can of Diced Green Chiles)
1 egg
1/4 cup dry bread crumbs
3 cloves garlic, minced, divided
1/2 tsp. salt
1 cup Real Mayo Mayonnaise
1 chipotle pepper in adobo sauce
PREHEAT oven to 375°F. Mix meat, cilantro, jalapeno pepper (or Chiles), egg, bread crumbs, 2/3 of the garlic and salt. Shape into 20 meatballs, each about 1 inch in diameter.
PLACE in 15x10x1-inch baking sheet sprayed with cooking spray.
BAKE 20 minutes or until meatballs are cooked through. Meanwhile, place mayo, remaining garlic and chipotle pepper in blender container; cover. Blend until smooth. Serve with meatballs.

I am in need
Hello everyone. I am in need of some recipes. I was given a ton of beans all varieties. They are canned like northern, white, pinto, black, etc. Literally all varieties. So if anyone has some good recipes they could give me so that I can use them. I only have a few recipes involving beans. Thanks

Asian Chicken
I have stumbled across a new way to make chicken that I am in love with. You take your chicken and marinade it in that Asian toasted sesame seed dressing for a few hours or overnight. Than you grill, pan fry, or bake the chicken and serve over rice. I use all the dressing and cook it with the marinade than use the leftover sauce over the rice. I love this. It comes out so yummy. I serve it with a vegetable of my choice and it makes a pretty good meal. One that even Aaron loves. I am using salad dressing more and more and marinades. With all the new flavors that they have you can get some pretty good meals that seem like it has taken hours to make when it takes no time at all. I love it.

Babka
Here is Aaron favorite dish.
Babka
Crust:
2 1/1 C flour
1/2 C Shortening
1/2 C butter
2 eggs
6 TBSP butter
mix all ingredients together roll out into a square or whatever shape you like.
Filling:
1lb ground beef
1 C sour cream
1 can cream of mushroom soup
Mushrooms
celery
onions
Brown the beef had sour cream and soup. Chop up mushrooms, celery onion saute together. Add to beef mixture. Place mixture into Center of crust, fold crust over to make like a rectangular shape or whatever shape you made. Place on cookie sheet. Bake at 375 30min.
You basically make a meat pie. You can also make it in a pie crust like a pot pie whichever you feel like.
This is yummy you can add more sour cream if you like it creamier. It is very versatile.

Peach Pie
I spent all last weekend making jam, fruit leather , and dried fruit. I am still making dried fruit and fruit leather. But I still had a few peaches left over that I did not want to waste. So I asked my mother in law if has some sort of recipe for peach something. She gave me a recipe for peach pie. And it turned out to take only like 10 min plus the time to cook the crust. I could not believe it. Here is the recipe.
1 sm orange jello package
1 cup sugar
2 heaping Tablespoon cornstarch
2 cups water
Mix all together in sauce pan until it boils and thickens. Pour over sliced peaches. You just use a regular pie that you have already baked to put the peaches in. Put in fridge until it is set up.
This was a really simple but soooo good peach pie. The orange and the peach really compliment each other. So now I am all peached out with my peach jam, peach fruit leather, and dried peaches with my dried banana's and apples. It was a busy cooking week for me but it was a lot of fun. I had never used the dehydrator that my grams had given me and I had never made jam before it was a great experience, that turned out easier than I was expecting.

Chinese food
OK this is a non recipe, but I cannot believe what I have found out. Your going to think that I am crazy or dumb for never realizing this before I don't know. Anyway last night all I wanted was some Chinese food but was not in the mood for cooking, (I found a Chinese recipe I am going to try out I will let you know what I think, I am always looking for homemade takeout recipes), so I just called in some random food off the ala carte so I did not have to spend a lot of money. So I ordered lo mein, sesame chicken, and generals chicken, all ala carte it only cost me just a little over twenty dollars. Getting home I unpacked everything and realized I had enough food to feed an army. I could not believe how much food we had gotten. I have never ordered ala carte before we always order the combo stuff. We seriously have enough food for three more meals and it was delicious. It all came with white rice as well I was very impressed. Kenzie even ate generals chicken and loved it along with everything else, it was funny to see her eat it.
